Tips

  • Use a real block of Greek or Bulgarian feta in brine for the creamiest melt. Crumbled feta dries out and will not give you the same saucy result.
  • Swap penne for orecchiette, fusilli or rigatoni to catch more of the sauce. Keep the reserved pasta water handy, the starch is what emulsifies the feta and oil into a glossy sauce.
  • For a punchier finish stir in a squeeze of lemon juice and a handful of rocket or baby spinach just before serving, the residual heat wilts it perfectly.
