- 500 g cherry tomatoes
- 200 g block feta cheese
- 60 g extra virgin olive oil
- 3 garlic cloves
- 1/2 tsp red chilli flakes
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 300 g penne pasta
- 10 g fresh basil leaves
- 1200 g water
Method
Preparation
- 1 Preheat oven to 200°C and grab a medium baking dish.
- 2 Add 3 garlic cloves to mixing bowl.Weigh
- 3 Chop 3 sec/speed 6.3s / sp6
- 4 Tip chopped garlic into the baking dish with the 500 g cherry tomatoes, 60 g olive oil, 1/2 tsp chilli flakes, 1/2 tsp sea salt and 1/4 tsp black pepper. Toss to coat.Weigh 5
- 5 Nestle the 200 g block of feta in the centre and drizzle with an extra splash of olive oil.Weigh
- 6 Bake in the oven 35 min at 200°C, until the tomatoes burst and the feta turns golden at the edges.
- 7 Rinse the mixing bowl.
- 8 Add 1200 g water to mixing bowl.Weigh
- 9 Place 300 g penne pasta in the simmering basket and lower into the bowl.Weigh
- 10 Cook 12 min/100°C/speed 4.12min / 100°C / sp4
- 11 Lift the basket out, reserve 100 g of the pasta water, then drain.
- 12 Remove the baking dish from the oven. Mash the feta and tomatoes together with a fork into a creamy sauce.
- 13 Add the drained pasta and 10 g torn fresh basil leaves to the baking dish. Toss, loosening with the reserved pasta water until the sauce coats every piece.Weigh
- 14 Serve immediately with extra basil and a crack of black pepper.
Notes
Tips
- Use a real block of Greek or Bulgarian feta in brine for the creamiest melt. Crumbled feta dries out and will not give you the same saucy result.
- Swap penne for orecchiette, fusilli or rigatoni to catch more of the sauce. Keep the reserved pasta water handy, the starch is what emulsifies the feta and oil into a glossy sauce.
- For a punchier finish stir in a squeeze of lemon juice and a handful of rocket or baby spinach just before serving, the residual heat wilts it perfectly.
