- 50 g unsalted butter, plus extra to fry
- 300 g milk
- 2 eggs
- 30 g sugar
- 200 g plain flour
- 1 tbsp baking powder
- 1/4 tsp sea salt

Preparation
- 1 Add 50 g unsalted butter to mixing bowl.Weigh
- 2 Melt 2 min/70°C/speed 1.2min / 70°C / sp1
- 3 Add 300 g milk to mixing bowl.Weigh
- 4 Add 2 eggs to mixing bowl.Weigh
- 5 Add 30 g sugar to mixing bowl.Weigh
- 6 Add 200 g plain flour to mixing bowl.Weigh
- 7 Add 1 tbsp baking powder to mixing bowl.Weigh
- 8 Add 1/4 tsp sea salt to mixing bowl.Weigh
- 9 Mix 10 sec/speed 5.10s / sp5
- 10 Place a frying pan over medium heat and melt 1 teaspoon of butter. For each pancake, pour in a ladle of batter and cook 1-2 minutes until bubbles appear on the surface. Flip and cook for a further 1 minute.
- 11 Transfer pancakes to a thermal serving bowl or plate and cover with a tea towel to keep warm. Repeat with the remaining batter.
- 12 Serve warm with toppings of choice (see Tips).
Notes
Tips
- To substitute butter with oil, omit step 1 and add 50 g oil along with all other ingredients in step 2. Use oil instead of butter for frying.
- Serve with maple syrup, whipped cream, chocolate, caramel sauce, jam and fresh fruit.
- Let the batter rest 5 minutes before cooking for fluffier pancakes.
