- 60 g cheddar cheese, cubed
- 60 g mozzarella cheese, cubed
- 60 g Parmesan cheese, cubed
- 1200 g water
- 1 - 1 1/2 tsp sea salt, plus 2 pinches
- 120 g macaroni pasta
- 250 - 300 g broccoli florets
- 20 g butter
- 2 Tbsp plain flour
- 200 g milk
- 2 pinches ground nutmeg
- 1 tsp mustard powder
- 1 - 1 1/2 tsp ground black pepper, to taste
- 2 pinches sweet paprika
Method
Preparation
- 1 Preheat the oven to 400F and lightly grease a baking dish.
- 2 Place cheddar, mozzarella and Parmesan into the mixing bowl and grate 8 sec/speed 8. Transfer to a bowl and set aside.8s / sp8
- 3 Add water and 2 pinches of salt to the bowl and bring to a boil 10 min/100C/speed 1.Weigh10min / 100°C / sp1
- 4 Add macaroni and cook for half the package time/100C/reverse/speed spoon. Add broccoli during the last 3 minutes so it softens but stays bright.
- 5 Drain the pasta and broccoli and set aside. Rinse and dry the mixing bowl.
- 6 Add butter, flour, milk, nutmeg, mustard powder, remaining salt and black pepper. Cook 6 min/90C/speed 3 until thickened.6min / 90°C / sp3
- 7 Add two-thirds of the grated cheese and mix 20 sec/reverse/speed 2 until melted.
- 8 Fold the sauce with the pasta and broccoli, spread into the baking dish, top with the remaining cheese and paprika, then bake 12-15 minutes until bubbling and golden.

Tips
