- 225 g butter, softened and cubed
- 220 g brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 180 g rolled oats
- 190 g plain flour
- 1 tsp baking soda
- 1/2 tsp salt
- 150 g raisins
Method
Preparation
- 1 Preheat oven to 175C (350F) and line two baking trays with paper.
- 2 Add butter and brown sugar to mixing bowl. Cream 30 sec/speed 4. Scrape down.30s / sp4
- 3 Add eggs and vanilla. Mix 20 sec/speed 4 until smooth.20s / sp4
- 4 Add flour, baking soda, and salt. Mix 15 sec/speed 3 until combined.15s / sp3
- 5 Add rolled oats. Mix 20 sec/reverse/speed 2 until evenly distributed.
- 6 Add raisins. Mix 15 sec/reverse/speed 2 to fold through without crushing.
- 7 Drop heaped tablespoons onto prepared trays, spacing 5 cm apart. Bake 10-12 min until edges are golden but centres still look soft.
- 8 Cool on trays 5 min before transferring to a wire rack.
Notes
Tips
- For extra chew, chill the dough 30 min before scooping.
- Swap raisins for sultanas, chopped dates, or dark chocolate chips.
- Store in an airtight tin for up to 5 days, or freeze raw dough balls and bake from frozen adding 2 min.
