- 3 eggs
- 15 g butter
- 1 pinch salt
- 1 pinch black pepper

- 1 Add butter to mixing bowl and melt 2 min/70C/speed 1.2min / 70°C / sp1
- 2 Add eggs, salt, and pepper. Cook 4 min/70C/speed 2, measuring cup on, scraping down sides once halfway through.4min / 70°C / sp2
- 3 Check consistency. If still loose, cook a further 30 sec/70C/speed 2 until soft curds form.30s / 70°C / sp2
- 4 Transfer immediately to a warm plate so residual heat does not overcook the eggs.
Notes
Tips
- Pull the eggs slightly underdone, they will continue to set on the plate.
- Swap butter for a splash of cream at the end for an even silkier finish.
- Use the spatula to loosen the curds from the bowl walls before serving.
