- 1 medium brown onion, quartered
- 3 cloves garlic
- 20 g fresh ginger, peeled
- 30 g extra virgin olive oil
- 1 tsp ground cumin
- 1 tsp ground turmeric
- 1/2 tsp smoked paprika
- 1/4 tsp black pepper
- 1 pinch cayenne pepper
- 400 g tinned diced tomatoes
- 200 g dried black lentils (beluga), rinsed
- 800 g vegetable stock
- 1 tsp salt
- 100 g baby spinach
- 15 g lemon juice (about half a lemon)
Method
Preparation
- 1 Add 1 medium brown onion, quartered, to mixing bowl.Weigh
- 2 Add 3 cloves garlic to mixing bowl.Weigh
- 3 Add 20 g fresh ginger, peeled, to mixing bowl.Weigh
- 4 Chop 5 sec/speed 5. Scrape down lid and sides with spatula.5s / sp5
- 5 Add 30 g extra virgin olive oil to mixing bowl.Weigh
- 6 Saute 3 min/120C/speed 1, measuring cup off.3min / 120°C / sp1
- 7 Add 1 tsp ground cumin to mixing bowl.Weigh
- 8 Add 1 tsp ground turmeric to mixing bowl.Weigh
- 9 Add 1/2 tsp smoked paprika to mixing bowl.Weigh
- 10 Add 1/4 tsp black pepper to mixing bowl.Weigh
- 11 Add 1 pinch cayenne pepper to mixing bowl.Weigh
- 12 Cook 1 min/120C/speed 1, measuring cup off, to bloom the spices.1min / 120°C / sp1
- 13 Add 400 g tinned diced tomatoes to mixing bowl.Weigh
- 14 Add 200 g dried black lentils, rinsed, to mixing bowl.Weigh
- 15 Add 800 g vegetable stock to mixing bowl.Weigh
- 16 Add 1 tsp salt to mixing bowl.Weigh
- 17 Cook 30 min/100C/reverse speed 1, measuring cup on. Check lentils are tender, if still firm, cook a further 5 min/100C/reverse speed 1.
- 18 Add 100 g baby spinach to mixing bowl.Weigh
- 19 Add 15 g lemon juice to mixing bowl.Weigh
- 20 Cook 2 min/100C/reverse speed 1, measuring cup on, until spinach is wilted.
- 21 Season to taste and serve in bowls.
Notes
Tips
- Inspired by Bryan Johnson's Blueprint Super Veggie. Adapted for Thermomix by AdaptMyRecipe.
- Black (beluga) lentils hold their shape better than red or green lentils, no soaking needed, just rinse.
- For extra protein, stir through 100 g cooked chickpeas with the spinach.
- Keeps well in the fridge for 3 days. Reheat gently, lentils absorb liquid as they sit, so add a splash of water when reheating.
- For a creamier version, remove 2 ladlefuls before adding spinach, blend 10 sec/speed 8, then return to the bowl.
