- 1 brown onion, peeled and quartered
- 3 garlic cloves
- 2 celery stalks, cut in 3 cm pieces
- 30 g extra virgin olive oil
- 400 g cauliflower florets
- 300 g broccoli florets
- 100 g kale leaves, stems removed
- 700 g vegetable stock
- 1 tsp ground turmeric
- 1/4 tsp freshly ground black pepper
- 1 tsp sea salt
- 20 g lemon juice
- 20 g extra virgin olive oil, to finish
- 30 g hemp hearts, to serve
- 40 g pomegranate arils, to serve

Preparation
- 1 Add 1 brown onion to mixing bowl.Weigh
- 2 Add 3 garlic cloves to mixing bowl.Weigh
- 3 Add 2 celery stalks to mixing bowl.Weigh
- 4 Chop 4 sec/speed 5.4s / sp5
- 5 Add 30 g extra virgin olive oil to mixing bowl.Weigh
- 6 Cook 5 min/120°C/speed 1.5min / 120°C / sp1
- 7 Add 400 g cauliflower to mixing bowl.Weigh
- 8 Add 300 g broccoli to mixing bowl.Weigh
- 9 Add 100 g kale to mixing bowl.Weigh
- 10 Add 700 g vegetable stock to mixing bowl.Weigh
- 11 Add 1 tsp ground turmeric to mixing bowl.Weigh
- 12 Add 1/4 tsp black pepper to mixing bowl.Weigh
- 13 Add 1 tsp sea salt to mixing bowl.Weigh
- 14 Cook 18 min/100°C/speed 1.18min / 100°C / sp1
- 15 Mix 30 sec/speed 4.30s / sp4
- 16 Mix 30 sec/speed 7.30s / sp7
- 17 Mix 30 sec/speed 9.30s / sp9
- 18 Add 20 g lemon juice to mixing bowl.Weigh
- 19 Add 20 g extra virgin olive oil to mixing bowl.Weigh
- 20 Mix 10 sec/speed 3.10s / sp3
- 21 Ladle into warmed bowls and top with hemp hearts and pomegranate arils.
Notes
Tips
- Inspired by Bryan Johnson's Blueprint protocol. Adapted for Thermomix by AdaptMyRecipe.
- Chop the cruciferous veg and let it rest 5-10 min before cooking, that pause lets the enzyme myrosinase convert glucoraphanin into sulforaphane, the compound the research is built around.
- Turmeric plus black pepper is the classic pairing, piperine boosts curcumin absorption dramatically.
- Add the finishing olive oil off the heat. Polyphenols degrade above 80C, so the cooked-in oil handles the saute and the raw pour delivers the compounds.
- No watching, no stirring, no scorched bottom. The bowl simmers and purees in the same vessel while you set the table.
- Swap kale for spinach, chard, or cavolo nero depending on what is in the fridge. Frozen florets work too, add 3 min to the simmer.
