Blueprint Nutty Pudding
A rich, creamy nut pudding loaded with macadamias, walnuts, Brazil nuts, chia seeds and cocoa. High-fat longevity dessert that the Thermomix blends to a thick, spoonable texture in under two minutes.

- 50 g macadamia nuts
- 30 g walnuts
- 3 Brazil nuts (about 12 g)
- 2 tbsp chia seeds (about 20 g)
- 1 tbsp ground flaxseed (about 7 g)
- 1 tbsp cocoa powder (about 6 g)
- 1/2 tsp Ceylon cinnamon
- 1 tbsp sunflower lecithin (about 8 g)
- 200 ml unsweetened macadamia milk
- 80 g fresh blueberries
- 1 tsp vanilla extract
Method
Preparation
- 1 Add 50 g macadamia nuts to mixing bowl.Weigh
- 2 Add 30 g walnuts to mixing bowl.Weigh
- 3 Add 12 g Brazil nuts to mixing bowl.Weigh
- 4 Chop 8 sec/speed 7. Scrape down lid and sides with spatula.8s / sp7
- 5 Add 20 g chia seeds to mixing bowl.Weigh
- 6 Add 7 g ground flaxseed to mixing bowl.Weigh
- 7 Add 6 g cocoa powder to mixing bowl.Weigh
- 8 Add 1/2 tsp Ceylon cinnamon to mixing bowl.Weigh
- 9 Add 8 g sunflower lecithin to mixing bowl.Weigh
- 10 Mix 5 sec/speed 4 to combine dry ingredients.5s / sp4
- 11 Add 200 ml unsweetened macadamia milk to mixing bowl.Weigh
- 12 Add 1 tsp vanilla extract to mixing bowl.Weigh
- 13 Blend 30 sec/speed 8 until smooth and creamy. Scrape down sides.Blend
- 14 Add 80 g fresh blueberries to mixing bowl.Weigh
- 15 Mix 10 sec/speed 4/reverse to fold berries through without fully crushing them.10s / sp4
- 16 Transfer to serving bowls. For a thicker pudding, refrigerate 15-20 min to let chia seeds gel before eating.
Notes
Tips
- Inspired by Bryan Johnson's Blueprint Nutty Pudding. Adapted for Thermomix by AdaptMyRecipe.
- For a completely smooth texture, skip reverse mode in step 4 and blend the blueberries at speed 8 with everything else.
- Swap macadamia milk for any unsweetened plant milk, oat and almond both work well.
- Keeps in the fridge for up to 24 hours. The texture thickens as the chia seeds absorb liquid overnight.
- Use raw, unsalted nuts for the cleanest flavour.
