Tips

  • Chaga should never be boiled hard, the 80C extraction preserves its beneficial compounds while still pulling plenty of flavour and colour.
  • The concentrate keeps in the fridge for up to 5 days. Reheat individual portions with milk on the stove or in the Thermomix at 70C/3 min/speed 1.
  • For a stronger chai hit, add an extra 2 cardamom pods and 2 cloves. For a more mellow brew, reduce black pepper to 4 peppercorns.
  • Works well with oat milk or coconut milk for a dairy-free version.
