Chaga Chai Concentrate
A warming, immune-boosting chai concentrate powered by chaga mushroom and whole spices. Make a batch on Sunday, then just add hot milk all week.

- 1000 g water
- 15 g chaga mushroom powder
- 40 g fresh ginger, sliced into coins
- 2 cinnamon sticks, snapped in half
- 12 green cardamom pods, lightly crushed
- 6 whole cloves
- 8 black peppercorns
- 2 whole star anise
- 4 tbsp loose black tea (Assam or CTC)
- 2 tbsp honey or maple syrup (optional)

Preparation
- 1 Add 1000 g water to mixing bowl.Weigh
- 2 Add 15 g chaga mushroom powder to mixing bowl.Weigh
- 3 Cook 45 min/80C/speed 1 with measuring cup on. This long, gentle extraction draws out the beta-glucans and adaptogenic compounds from the chaga.45min / 80°C / sp1
- 4 Add 40 g fresh ginger, sliced, to mixing bowl.Weigh
- 5 Add 2 cinnamon sticks, snapped in half, to mixing bowl.Weigh
- 6 Add 12 green cardamom pods, lightly crushed, to mixing bowl.Weigh
- 7 Add 6 whole cloves to mixing bowl.Weigh
- 8 Add 8 black peppercorns to mixing bowl.Weigh
- 9 Add 2 whole star anise to mixing bowl.Weigh
- 10 Cook 20 min/100C/speed 1 with measuring cup on.20min / 100°C / sp1
- 11 Add 4 tbsp loose black tea to mixing bowl.Weigh
- 12 Cook 5 min/90C/speed 1 with measuring cup on. Do not boil the tea or it will turn bitter.5min / 90°C / sp1
- 13 If using honey or maple syrup, add 2 tbsp now and mix 10 sec/speed 2.10s / sp2
- 14 Strain through simmering basket into a heatproof jug or jar. Press the spices gently with a spoon to extract all the liquid. Discard solids.
- 15 To serve, dilute 1 part concentrate with 1-2 parts hot milk or plant milk. Adjust sweetness to taste.
Notes
Tips
- Chaga should never be boiled hard, the 80C extraction preserves its beneficial compounds while still pulling plenty of flavour and colour.
- The concentrate keeps in the fridge for up to 5 days. Reheat individual portions with milk on the stove or in the Thermomix at 70C/3 min/speed 1.
- For a stronger chai hit, add an extra 2 cardamom pods and 2 cloves. For a more mellow brew, reduce black pepper to 4 peppercorns.
- Works well with oat milk or coconut milk for a dairy-free version.
