Coconut Prawn Laksa
A proper laksa broth built from scratch in the bowl, spice paste, coconut, stock, then raw prawns dropped in for just four minutes at the end. Add them any earlier and you will be eating rubber.

- 2 long red chillies, stems removed
- 3 garlic cloves
- 20 g fresh ginger, peeled
- 20 g fresh galangal, peeled (or extra ginger)
- 1 lemongrass stalk, white part, cut in 2 cm pieces
- 2 shallots, peeled
- 1 tsp ground turmeric
- 1 tsp shrimp paste (belacan)
- 30 g peanut oil
- 400 g tinned coconut milk
- 500 g chicken or seafood stock
- 30 g fish sauce
- 15 g palm sugar
- 200 g dried rice vermicelli
- 500 g raw prawns, peeled and deveined (tails on)
- handful bean sprouts
- 1 lime, cut in wedges
- handful fresh coriander and Vietnamese mint
- 2 hard-boiled eggs, halved (optional)
Method
Preparation
- 1 Add chillies, garlic, ginger, galangal, lemongrass, and shallots to mixing bowl. Chop 10 sec/speed 7 into a coarse paste. Scrape down.10s / sp7
- 2 Add turmeric, shrimp paste, and peanut oil. Saute 5 min/Varoma temp/speed 1/measuring cup off until the paste darkens and smells fragrant (not acrid).
- 3 Add coconut milk, stock, fish sauce, and palm sugar. Cook 15 min/100C/speed 2/measuring cup on to develop the broth.15min / 100°C / sp2
- 4 While broth simmers, soak rice vermicelli in hot water for 5 min until tender, then drain and divide between four bowls.
- 5 Add prawns to the bowl. Cook 4 min/Varoma temp/reverse speed 1/measuring cup off. Prawns are done the moment they turn pink and opaque, stop immediately. A minute over and they toughen.
- 6 Ladle broth and prawns over the noodles. Top with bean sprouts, herbs, halved boiled egg, and a lime wedge.
Notes
Tips
- Prawns go in LAST for a reason, they need just 3-5 min at Varoma temp/reverse speed 1. If your prawns are tiny (under 15 g each) drop to 3 min.
- Reverse speed prevents the prawns from bumping against the blade and tearing.
- Toast some desiccated coconut in a dry pan and scatter over the top for crunch.
