Lion's Mane Latte
A warming nootropic latte with lion's mane mushroom, coconut oil and cinnamon. Heated to 70C to keep the bioactives intact, then frothed smooth in the Thermomix.

- 300 ml oat milk
- 1 tsp lion's mane mushroom powder (about 2 g)
- 1 tsp coconut oil (about 5 g)
- 1/4 tsp ground cinnamon
- 1/4 tsp vanilla extract
- 1 tsp honey (about 7 g)

Preparation
- 1 Add 300 ml oat milk to mixing bowl.Weigh
- 2 Add 1 tsp lion's mane mushroom powder to mixing bowl.Weigh
- 3 Add 1 tsp coconut oil to mixing bowl.Weigh
- 4 Add 1/4 tsp ground cinnamon to mixing bowl.Weigh
- 5 Add 1/4 tsp vanilla extract to mixing bowl.Weigh
- 6 Add 1 tsp honey to mixing bowl.Weigh
- 7 Heat 4 min/70C/speed 2, measuring cup on.4min / 70°C / sp2
- 8 Froth 30 sec/speed 9, measuring cup on.30s / sp9
- 9 Pour into a mug and serve immediately.
Notes
Tips
- 70C keeps lion's mane beta-glucans and hericenones intact, higher temperatures can degrade them.
- Double the batch for two servings using 600 ml oat milk and double all other ingredients.
- Swap honey for maple syrup or a pitted medjool date for a vegan version.
- Add 1/2 tsp cacao powder or a pinch of turmeric for variety.
