- 400 g coconut milk
- 60 g chia seeds
- 25 g collagen peptides
- 4 g matcha powder
- 25 g maple syrup
- 5 g vanilla extract
- pinch of salt
Method
Preparation
- 1 Add coconut milk, collagen peptides, matcha powder, maple syrup, vanilla extract and salt to mixing bowl. Mix 30 sec/speed 5. Scrape down lid and sides with spatula.30s / sp5
- 2 Add chia seeds. Mix 10 sec/speed 2/reverse. This keeps the seeds whole while distributing them evenly.10s / sp2
- 3 Pour into two jars or bowls. Stir each jar once after 10 minutes to prevent chia seeds settling at the bottom.
- 4 Cover and refrigerate for at least 6 hours or overnight. Pudding will thicken as the chia seeds absorb the liquid.
- 5 Serve cold. Top with fresh fruit, coconut flakes or a dusting of extra matcha.
Notes
Tips
- Use full-fat canned coconut milk for a richer, creamier result. Carton coconut milk works but gives a thinner pudding.
- Collagen peptides are flavourless and dissolve completely at speed 5, no grittiness.
- Keeps well in the fridge for up to 3 days, so double the batch if meal prepping.
- If the pudding is too thick after overnight, stir in a splash of coconut milk before serving.
