Tips

  • Use full-fat canned coconut milk for a richer, creamier result. Carton coconut milk works but gives a thinner pudding.
  • Collagen peptides are flavourless and dissolve completely at speed 5, no grittiness.
  • Keeps well in the fridge for up to 3 days, so double the batch if meal prepping.
  • If the pudding is too thick after overnight, stir in a splash of coconut milk before serving.
