Classic Shepherd's Pie
Lamb mince braised on reverse speed with carrots and peas, then topped with buttery mash and oven-finished until the potato crust cracks. The Thermomix handles the filling and the mash; the oven earns the crust.

- 800 g floury potatoes, peeled and cut in 3 cm pieces
- 1 brown onion, halved
- 2 garlic cloves
- 1 carrot, cut in 3 cm pieces
- 30 g olive oil
- 700 g lamb mince
- 30 g plain flour
- 200 g beef or lamb stock
- 30 g tomato paste
- 30 g Worcestershire sauce
- 2 sprigs fresh thyme, leaves only
- 100 g frozen peas
- 80 g butter
- 80 g milk
- salt and pepper to taste
- 30 g grated parmesan (optional)
Method
Preparation
- 1 Place potato pieces in the simmering basket. Add 900 g water to mixing bowl, insert basket, and cook 25 min/Varoma temp/speed 4 until tender. Test with a knife tip.
- 2 Lift out basket carefully (very hot). Drain and discard water. Tip potatoes into bowl. Add butter, milk, salt, and pepper. Mash 15 sec/speed 4. Transfer mash to a bowl and set aside. Rinse mixing bowl.15s / sp4
- 3 Add onion, garlic, and carrot to clean bowl. Chop 4 sec/speed 5. Scrape down.4s / sp5
- 4 Add olive oil. Saute 5 min/120C/speed 1/measuring cup off.5min / 120°C / sp1
- 5 Add lamb mince. Cook 20 min/100C/reverse speed 1/measuring cup off, pausing at 8 and 15 min to break up clumps with a spatula. Long enough to render fat and lose pink colour without stewing into a grey paste.
- 6 Sprinkle flour over the mince. Cook 2 min/100C/reverse speed 1 to cook out the raw flour taste.
- 7 Add stock, tomato paste, Worcestershire, and thyme. Cook 20 min/100C/reverse speed soft/measuring cup on to thicken.
- 8 Stir in peas 30 sec/speed 2/reverse. Season to taste.30s / sp2
- 9 Transfer filling to a 2 l baking dish. Spread mash evenly over the top with a fork, drawing lines for extra crunch. Scatter parmesan if using.
- 10 Bake 25 min at 200C (oven) until topping is golden and bubbling at the edges. This step happens in the oven, not the bowl, the Thermomix cannot brown a crust.
- 11 Rest 5 min before serving.
Notes
Tips
- The pause-and-break steps during the mince cook prevent large clumps forming; skip them and you get hockey-pucks.
- For a richer topping, add 50 g grated cheddar to the mash before spreading.
- Traditional shepherd's pie uses lamb; substituting beef mince makes it a cottage pie.
